    • Duck foie gras

      x 400 grams

    Cut into little cubes. Sear for a few seconds in a very hot, ungreased skillet. Set aside on a paper towel.
    • Salt

      x 1 teaspoon

    • Pepper

      x 1 teaspoon

    Season.
    • Shallot

      x 1

    Chop and melt in the skillet for a few seconds (pour the fat into the skillet beforehand). Mix in the foie gras.
    • Coriander

      x As much as needed

    Chop finely and add to the mixture.

    Fill some small porcelain ramekins and refrigerate.
    • Spéculoos

      x 100 grams

    • Duck foie gras

      x 100 grams

    Crush the biscuits into fine crumbs and mix the rest of the foie gras which has been softened.

    Fill the ramekins with this mixture and put back in the refrigerator.

    Heat up the ramekins for five minutes in the oven at 480°F, then serve immediately.
