White sandwich bread

x 12 slices

Remove the crusts from the sandwich bread.

Lemon

x 1

Squeeze a lemon and recuperate the juice.

Bean sprouts

x ½

Rinse and spin the sprouts.

Radish

x ½ bunch

Rinse the radishes, remove the tops and thinly slice.

Cucumber

x ½

Peel and thinly slice the cucumber.

Chives

x ½ bunch

Rinse and chop the chives.

Cream cheese

x 180 grams
Red Espelette chili pepper

x 2 pinches

In a bowl, place the farmer's cheese, chives, lemon juice and Espelette pepper.

Combine and adjust the seasoning. Crush all together with a fork until a uniform texture is obtained.

Toast the sandwich bread until it's a nice golden brown.

Generously spread the farmer's cheese mixture over the toast.

Cover with some sprouts, radish and cucumber.

Add another slice of bread and repeat the operation to obtain a club sandwich with 3 slices of bread.

Cut the sandwiches diagonally to obtain a triangle.
