    In a saucepan, melt the butter, add the flour and whisk together on a low heat.
    When the mixture develops a doughy texture, pour the milk in and continue to whisk. Add a tablespoon of mustard immediately.

    Once at room temperature, pour the egg into the sauce and stir until it has all mixed together.
    • Paprika

      x 2 pinches

    Grate the cheese and add it to the saucepan. Stir until sauce thickens.

    Season and add the spices to taste. Then add the al dente macaroni to the sauce.
    Pour the creamy mixture into an ovenproof dish and sprinkle liberally with cheese.
